Cauliflower Mashed Potatoes

Cauliflower Mashed "Potatoes"
(This will be part of my Christmas dinner! YUM!!!)
Serves: 6
Ingredients:
1 large head cauliflower, cut into florets
2 cups chicken broth
1 tablespoons butter
1/2 cup shredded white cheddar
1/4 cup grated Parmesan cheese
salt and pepper to taste
Directions:
1. Bring cauliflower and chicken broth to a boil in a large saucepan over high heat. Reduce heat to medium, cover, and simmer for 10 minutes. Uncover the saucepan and increase heat to medium-high. Allow cauliflower to simmer until soft and the cooking liquid has reduced by half, about 10 minutes. 2. Remove cauliflower from the heat, and add the butter, Cheddar cheese, and Parmesan cheese. Mash with a potato masher until the cheeses have melted and the cauliflower is smooth, then season to taste with salt and pepper.

Ingredients
1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter
Directions
Set a stockpot of water to boil over high heat.

Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.

Garnish with chives, and serve hot with pats of butter.

Hint: Try roasting the garlic and adding a little fresh

rosemary for a whole new taste.

Cauliflower Fritters

Cauliflower Fritters

1 large head cauliflower

1/2 flour

1 egg

Steam cauliflower, place in bowl and mash and let cool 10 min.
Stir in flour and egg, season with salt and pepper and refrigerate for 15 min.
Roll mixture into ball then flatten into patties. Heat 2 tablespoons olive oil over
medium heat. Fry patties until golden brown about 4 min. on each side.
